Southern Girl Gets Fit Fried Rice

Two posts in one day?! What whatttttt. I had to share this amazingness with you though. I didn't follow a recipe but I made note of what I did. You gotta make this, yall. Fabulous. Gone with the wind fabulous.


I love chinese food but don't love the calories, fried-ness and MSG. I made some changes and made my version of fried rice to get my fix. Even S loved it so I call it a win!



I made it "make-your-own" style, so I could measure and mix mine separately. Here's what I did.

Boil in the Bag Brown Rice (I used Uncle Ben's and cooked 3 bags to have leftovers)
Pre-cooked Shrimp (can use raw, just cook to your liking)
Veggie mix of choice
1 egg
Teriyaki Sauce
Low Sodium Soy Sauce

Boil rice and heat vegetables as needed. All I had was a bag of frozen corn, peas, carrots and green beans, so I used that. Fresh veggies would work perfectly, just saute in non-stick spray before mixing with rice. While that's all going, I heated my shrimp in a nonstick pan with a little garlic powder and Cajun seasoning. Again, season to your liking. Remove rice from pot when done and fluff with a fork. Set aside. Scramble an egg (seasoned mine with a little black pepper).


Mix 1 cup rice, 1/2 or more of veggies, and 3 oz. shrimp, egg together in a bowl. Add 1 tablespoon teriyaki sauce and a dash of soy sauce. You won't need to add any salt because of the sauce, but mix well and taste.  I added garlic powder (but I love garlic like it's goin outta style, so you can omit if you want).

So easy, so good. Make it. Now!
